What you need

Instructions
1: Preheat oven to 375F on the convection setting. 2: In a large bowl, add the ground beef, ground lamb, and all the seasonings. 3: Combine everything with your hands or a spatula. 4: Grease a vertical spit and form three balls of meat, pressing them together. 5: Add a piece of foil on top of the spit. 6: Place the spit in the oven on the lower rack and bake for 45 minutes. 7: Remove from the oven, baste with juices, and pop it back in for another 40-45 minutes until the internal temperature reaches 160F. 8: Let sit for 20 minutes before slicing. 9: To make the tzatziki, add all tzatziki ingredients to a bowl, toss well, and adjust salt as needed. 10: Refrigerate the tzatziki for 20 minutes before serving. 11: To build your gyros, lay warm pitas on a plate, layer with tzatziki, gyros meat, tomatoes, parsley, and a drizzle of olive oil. 12: Fold up like a taco and enjoy.View original recipe
